Meat Inspection
SlaughterSafe Training
Completing SlaughterSafe food safety training is a mandatory requirement for all Class D and E applicants, and all individuals providing slaughter services to licence holders under a Class D or E licence.
SlaughterSafe was collaboratively designed by public health professionals and volunteer farmers in rural and remote communities, and is specifically for producers applying for a Class D or E licence. SlaughterSafe is part of a larger provincial government initiative to promote food safety and food security regarding livestock and meat production in remote communities.
SlaughterSafe Training Curriculum: What It Looks Like
- SlaughterSafe is a one-day course divided into two sessions. The morning session takes place in a classroom, and the afternoon session on a local farm.
- Participants will begin drafting their food safety plan during the course, and will have a hands-on opportunity to review and discuss an example plan on a local farm.
- At the end of training, successful participants will have a solid understanding of critical food safety control points in the slaughter process, and how to document them in a food safety plan.
- Detailed training materials will be provided to all course participants.
Who should take SlaughterSafe?
Slaughtering an animal properly is a skill and a responsibility. Food safety, the welfare of the animal, and meat quality can be severely compromised if a slaughter operator lacks the skills and experience to perform slaughter competently.
SlaughterSafe training does not teach you how to slaughter. It has been designed for:
- People who are competent in slaughter and who intend to slaughter animals themselves under a Class D or E licence.
- Slaughter experts hired to provide slaughter services to a Class D or E licence holder according to the approved food safety plan for that licence.
All individuals planning to slaughter should complete a slaughter competency self evaluation (PDF

). You should only apply for a Class D or E licence with the intent of slaughtering your own animals if you are competent in slaughter. If you are not, you should hire a slaughter expert to provide these services for you, find a mentor, or take training to develop your skills, knowledge and experience before slaughtering animals yourself.
